Cascadia Spring Tasting Menu

Last night, Eric and I ate at Cascadia. I have been a fan of the restaurant, since I first moved to Seattle and lived in the Austin Bell Building upstairs. Some nights, my dinner would consist of 3 mini-cheeseburgers and a glass of red wine (the Castle Rock usually). Last night, we both had the Spring Vegetarian Tasting Menu ($55):

grilled asparagus salad
shaved parmesan cheese, crisp sweet onions, ver jus vinaigrette

wild nettle bisque
basil & meyer lemon meringue pie

douglas fir sorbet

spring vegetable tart with quinoa risotto
chioggia beet & morel mushroom purée

washington artisan cheese
elderberry soaked black prunes, toasted brioche

spring forward
rhubarb & strawberry pie, honey mascarpone ice cream
All six courses were nicely executed, but our favorite was the grilled asparagus salad. At most Seattle restaurants, I often feel that I could have bought some mixed greens and made an equally tasty salad myself. Not the case at Cascadia. Instead of the wine pairing, we opted for a Novelty Hill Merlot blend. All in all - a great evening out on the town.
